I believe there is a double chart on Dancing Stage feat. Disney's Rave that has hands, though I don't know if it was the AC, JP CS, or US CS release that had it. IIRC it was the Mickey Mouse march.
Konami never did hands on their DDR titled releases. They also never used certain doubles jumps (1U2U, 1D2D, 1D2U, 1U2D, and 1L2R), presumably because it's fairly easy to injure yourself attempting them. In fact, if you put them in an edit (which the CS versions will happily let you do) and load the edit onto the machine, it will replace such a jump with the two center panels (1R2L).

I've done handplants, kneeplants, and even a buttplant a couple of times! ^_^ Doing nothing but feet can get boring after a while...and almost every good freestyle I've seen involves a plant of some variety. The most extreme plant I've seen? A headplant, actually. It was a long time ago, but it was so hardcore. If memory serves me right, it was Drewsifer during Dynamite Rave.

Ok, real seriousness, for most songs with hand plants all you have to do is squat down and hit arrows with your hands. Imagine that you're making a beat on a the floor. Now do this while hitting arrows.

Handplants, kneeplants...they're all very safe. As long as you use a bit of caution when you do it. Whenever I got the screw-shaped bruises on my hands, it was because I dropped back for my handplant. Like this...when all four arrows come up for you to hit at the same time, bend over forward, so that your torso is tucked as you're squatted with your feet on two arrows and your hands on two arrows in front of you.
Sometimes when I do it, I have my feet on two arrows, but my hands on two arrows that are behind me. So it looks more like I'm a crab/doing a backbend than anything else. And when you do it like this, you can't see where you're putting your hands. So landing on screws can happen. n_x And when you're in such a compromising position, falling from that position doesn't feel good, either.
Kneeplants are safe as well, as long as, once again, you use caution. Whenever I did it, I always got a small bruise under my knee, where the raised metal lip surrounds the window for the arrow. It's not bad, though, and it doesn't hurt.
And it looks fuckin' sweet if you do it all right.
If you're around an ITG machine, you should seriously go play Bend your Mind. Start on medium to get a feel for it, then move up to hard. It's seriously a very fun song, and it'll familiarize you with handplants.

I have had several injuries relating to kneeplants and handplants. The knee plant was because I am 6'4 and long legs. This meant that when I went down for a knee plant, I hit the screw and it tore open my knee. It was quite painful for a week or so . But handplants I've had some bad experiences before. One instance where I was playing bend your mind last summer, I hit an arrow on the ground with my hand and all the sudden it felt like the area between my middle and ring finger was on fire, and that feeling spread through my hand and it did that for a couple weeks. I think I might've had a tiny fracture on it. Just be careful and don't pound too hard on them. Other thing: the base of the hand is quite hard and if you do it right, you can hit the arrows with no injury.

I can speak for the dangers of handplants and kneeplants.
1.) Most good machines in the area have reasonably sensitive arrows, so there is no need to smack them hard. It makes your hand sting and decreases your recovery speed.
2.) Be careful not to lock your arm when you go down. If the shock has nowhere to go, it'll stay in your wrist, and it'll hurt. Trust me; it took me a few Pump plants to figure that out.
3.) Don't slip; after all, some of your weight is on that hand. If your hand slips, you'll go with it. Right, MonMotha?
4.) Unless you have excellent aim, I don't recommend double knee drops, because all your weight goes to two points, and if you miss the arrows...it hurts. Badly. Again, I have done this.
5.) For single knee plants, it again doesn't take much to register. A simple tap will usually do. The resulting bounce will help you stand again.
I hope these tips help you out.
